Brief description of the project

The project “Safety and quality for Moje malo zlato – certification according to the FSSC 22000 standard” is focused on implementing and certifying a food safety management system in line with internationally recognised standards. Its aim is to ensure the highest levels of safety and quality in the production of gluten-free bakery products, thereby increasing customer trust and enabling expansion into new markets. Applying the internationally recognised FSSC 22000 standard will allow the company to achieve top-level risk control, traceability, and safety at every stage of the process – from raw material procurement to the final product. The project will include staff training, optimisation of production processes, development of documentation, and a certification audit, ensuring compliance with the FSSC 22000 standard and the long-term sustainability of the business.

Goals and expected project results

The objectives of the project include improving the safety and quality of gluten-free bakery products, increasing consumer trust, and creating opportunities to enter more demanding domestic and international markets. The project covers key activities such as analysing the current state, optimising technological and hygiene processes, developing and harmonising documentation, implementing prerequisite programmes (PRPs), training employees, conducting internal audits, and completing the final certification audit.
Through a structured approach and clearly defined activities, this project will enable our company to achieve high food safety standards, resulting in increased customer confidence and the opening of new business opportunities.

Brief description of the project

The project “Development of a functional gluten-free pastry” involves the development of a functional gluten-free pastry intended for children, which contains bioactive components and has a positive effect on children’s metabolic health.

Goals and expected project results

By developing a functional gluten-free bun intended for children, Moje malo zlato aims to contribute to the diversity of gluten-free products on the Croatian market, especially those that support children’s health and a balanced diet.

The expected results of this project include creating a gluten-free bun with an improved nutritional profile, such as reduced sugar content and increased fibre content, which contribute to children’s metabolic health and the health of the gastrointestinal system.

In addition, through this project we aim to implement a circular economy approach in production by reducing waste, preserving resources, and repurposing by-products into new, nutritionally rich products. The results of this project will be demonstrated through basic and specialised nutritional analyses and nutrition claims that highlight the benefits of this bun for children.

Brief description of the project

Razvojne strategije d.o.o. is the first producer of bakery products in Croatia to be awarded AOECS standard - Association of European Coeliac Societies.

Goals and expected project results

The certification project of Moje Malo Zlato products was carried out with the purpose of increasing the recognition of quality of the product with the licensed sign of Crossed Grain.

The Crossed Grain sign is a registered trademark on the European Union level, national level but also by national coeliac societies which are members of AOECS. The sign is a guarantee of quality because a high production level guarantees the safety of the product. The Crossed Grain licence can be obtained only by those who can ensure gluten-free manufacturing according to AOECS standards (Association of European Coeliac Societies). Products encompassed by the AOECS standard are those that are manufactured with special care and in accordance with good manufacturing practice (GMP) in order to avoid contamination with gluten. The standards set for the sign of Crossed Grain correspond to the international standard established by the World Health Organisation / Codex Alimentarius of the Organisation for Food and Agriculture, embedded in European Law, European Directive 41/2009/EC for gluten-free food products. HDC (Croatian Coeliac Society) is a member of AOECS - Association of European Coeliac Societies and on behalf of AOECS it is currently working on licensing this sign for manufacturers in Croatia.

In order to meet requirements of the international audit, the following activities have been carried out:

  1. Chemical examination and analysis of products using the R5-sandwich Elisa (Mendez method)
  2. Independent certification audit and check of conformity with the AOECS standard
  3. Issuing the sign and number
